Back on the GFDF diet after a 48 hour fudge up

The Aspie teen had begged and begged to go back on a 'normal' diet so we agreed to relax the gluten free rules.
Hmph.
Tuesday he bought a container of bikkies from a Large Supermarket Chain, plain with choc chips.
He went a bit aggro and was a bit babbly in speech although it (Thankfully!) didn't last long.
Today he bought another container of the bikkies except it was double chocolate choc chip.
And went to sleep, then very aggro, very babbly and really right off about anything and everything.
After about 40 mins it stopped.
But his ears!
They have always been a barometer of his food allergies and tonight they were glowing bright red, hot to touch and screaming like a fire alarm that he was having a probable reaction.

The flash has actually bleached a lot of the colour out as they are much darker in real life.
He apologised for his behaviour and listened to us when we pointed out his reactions to these bikkies, he listened to us when we read out the ingredient list and was quite surprised to see that colours and flavours were just some of the ingredients listed, along with the usual suspects of wheat and milk.
I reminded him that whenever us mums cook at home none of us reach for the flavours or colours, yet our baked goodies are still yum.
And he agreed that he really needs to be on the GFDF diet.
Small victories but victories nonetheless!

Do not listen to the cook....

Decided to follow a recipe, peoples.
Note that - I followed a recipe.
A recipe that called for 1/4 cup of green curry paste.
I blithely did as I was told.
FOOL!!!!
Kept taste testing it and Holy Moses, Mother of God and Joseph the Carpenter...!
No amount of coconut or dairy milk, sugar, honey, bi carb of soda, mashed sweet potato or grated cheese could tone that baby down to being digestible to any without an asbestos-lined esophagus.
I think it will soon erode the base of the pan it's sitting in.

Cheese toastie/jaffle anyone...?

Soy, soy, soy

Shhhhhhhhhhh.........
Be vewy, vewy quiet.
I'm huntin' making soy yoghurt.
Aspie teen hasn't strictly been dairy free although I've been cutting it down and substituting with soy whenever I could.
But then I got hold of the magnifying glass and read the back of the yoghurt containers.
They has gluten in the shape of thickener 1442.
Yikes!
Had a gander at one brand of soy yoghurt in the supermarkets ...it also has the culprit.
Pooh.
Of the non-Tigger kind.
So, I knuckled down and started brewing my own.
Got a peach flavoured dairy-based one residing in Le Chilly Bin and a soy-based vanilla flavoured one burbling in the do-hickey-whats-it maker thingie.
Next on the list is soy cheese.
I hear that animal is pretty common around these parts so I should be home from hunting shortly....

GFDF Chocolate Cake


1/2 cup buckwheat flour
1/2 cup soy flour
1/2 cup rice flour
1/2 cup cornflour
Sieve all flours together into mixing bowl with 2 heaped teaspoons of baking powder.
Add 2 heaped tablespoons of cocoa powder, 3 teaspoons vanilla essence, 1 cup of brown sugar, 4 eggs (lightly beaten) 1/2 cup of soy milk (or milk of choice) mix thoroughly with spatula.
Scrape into greased cake pan, bake in moderate oven for 20-30 mins - check by inserting skewer into centre.
Let cool in cake pan then decant onto cake cooling rack.

GFDF Soda Bread Recipe #2

1 cup of buckwheat flour
1 cup of  cornflour
1 cup rice flour
1/2 cup of soy flour
Sieve together into mixing bowl with 1 heaped teaspoon of Bi Carb of Soda and 1 heaped teaspoon of Cream of Tartar.
Sprinkle in 1 teaspoon of salt and 1 teaspoon of sugar.
Make a well in the centre and begin to pour in 250 mls of soy milk (or milk of choice) until all flour is combined.
Work it a little on a floured surface but not hard and only for a short period of time.
Shape into loaf of choice, place on greased oven tray and bake in moderate oven for 20-30 mins or til golden brown.
