Have had an interesting day with the kid and spouse.
Both are off doin' their manly man thing of footy training after orthodontist and illustration sessions.
The teeth and the drawing were separate, by the way.
I have me a stalker copycat that borrows behaviours, events and incidents from my life to dramatise its own life. And not just my life but other friends' lives, too.
Aspie teen was outraged at first to hear the hassles he's been struggling with have become fodder for someone else to garner sympathy but he's 'meh' about it now.
He's now off yeast as we've discovered the revolting flatulence was from yeast in bread, even GFDF bread, so the list is growing.
He was proven to be allergic to it when he was little but it was thought he'd outgrow it.
Guess he didn't.
I'm having a horrible thought that he may still have an intolerance to bananas *sob* after mastering the GFDF banana bread muffins of late.
Let's not go there, just yet.
Thank goodness for allergists and paediatricians and specialists who listen and follow through!

Gluten free Dairy free Banana Bread Muffins
This was a Donna Hay recipe I converted into gluten free dairy free and it works really well!
Add the rest of the ingredients slowly one at a time.
Pour into a greased loaf tin or greased muffin tins.
Bake at 160 degrees C for approx. 55 mins (muffins) or until a skewer comes out clean.
*I've halved the amount of sugar from the original recipe and it could be lessened even further as the bananas (and sultanas) add a natural sweetness.
- 1/2 cup rice flour
- 1/2 cup tapioca flour
- 1/2 cup corn flour
- 3 bananas mashed
- 2 eggs
- 1/2 cup sugar
- 1 cup sultanas or 1 cup mixed seeds & nuts
- 80 grams dairy-free margarine
- 2 teaspoons vanilla essence
- 1 teaspoon baking powder
- 1/2 teaspoon Bi Carb of Soda
- 1 teaspoon cinnamon
- 1 dessert spoon of golden syrup

Soy, soy, soy
Shhhhhhhhhhh.........
Be vewy, vewy quiet.
I'mhuntin' making soy yoghurt.
Aspie teen hasn't strictly been dairy free although I've been cutting it down and substituting with soy whenever I could.
But then I got hold of the magnifying glass and read the back of the yoghurt containers.
They has gluten in the shape of thickener 1442.
Yikes!
Had a gander at one brand of soy yoghurt in the supermarkets ...it also has the culprit.
Pooh.
Of the non-Tigger kind.
So, I knuckled down and started brewing my own.
Got a peach flavoured dairy-based one residing in Le Chilly Bin and a soy-based vanilla flavoured one burbling in the do-hickey-whats-it maker thingie.
Next on the list is soy cheese.
I hear that animal is pretty common around these parts so I should be home from hunting shortly....

GFDF Chocolate Cake
1/2 cup buckwheat flour
1/2 cup soy flour
1/2 cup rice flour
1/2 cup cornflour
Sieve all flours together into mixing bowl with 2 heaped teaspoons of baking powder.
Add 2 heaped tablespoons of cocoa powder, 3 teaspoons vanilla essence, 1 cup of brown sugar, 4 eggs (lightly beaten) 1/2 cup of soy milk (or milk of choice) mix thoroughly with spatula.
Scrape into greased cake pan, bake in moderate oven for 20-30 mins - check by inserting skewer into centre.
Let cool in cake pan then decant onto cake cooling rack.

Sprinkle in 1 teaspoon of salt and 1 teaspoon of sugar.
Make a well in the centre and begin to pour in 250 mls of soy milk (or milk of choice) until all flour is combined.
Work it a little on a floured surface but not hard and only for a short period of time.
Shape into loaf of choice, place on greased oven tray and bake in moderate oven for 20-30 mins or til golden brown.
