GFDF Muesli Bar FAIL recycled into muesli muffins

I used to have a great recipe for GFDF muesli bars a bajillion years ago but my filing system is 'scribble it on a scrap of paper and shove it between the pages of a recipe book somewhere' and as I have a whole bookcase of recipe books...you can see the problem.
So, I gave this GFDF muesli bar recipe a try; it failed.
I was unsure what to do about the honey that wasn't mentioned until the end stage (no volume given) so it could be the culprit and in the comments I see I wasn't the only one to have problems.
We ended up with beautifully sweet, crunchy GFDF muesli bars...that crumbled the moment you tried to pick them up.
Now, GFDF products aren't cheap so I recyled the whole lot into a cake mix; I broke up the muesli mix then added 1 cup plain GF flour, 2 teaspoons of baking powder and 1 cup of fruit juice, mixed thoroughly and viola!
GFDF Muesli Muffins, which got the thumbs up from the Aspie teen.

sounds yum. I did something like that a few years back. Why is it that gluten free stuff is sooo costly and so hard to use? aaaarrrrrrrrrrr darn you gluten free!lol

Yeah, I know, Carrie, it's just that little extra we don't need when wrestling with Xantham gum lol.
