1 cup of buckwheat flour
1 cup of cornflour
1 cup rice flour
1/2 cup of soy flour
Sieve together into mixing bowl with 1 heaped teaspoon of Bi Carb of Soda and 1 heaped teaspoon of Cream of Tartar.
Sprinkle in 1 teaspoon of salt and 1 teaspoon of sugar.
Make a well in the centre and begin to pour in 250 mls of soy milk (or milk of choice) until all flour is combined.
Work it a little on a floured surface but not hard and only for a short period of time.
Shape into loaf of choice, place on greased oven tray and bake in moderate oven for 20-30 mins or til golden brown.
